Mince toasties

This is another Kenyan recipe, mostly made in Ramadan

Ingredients

  • 1lb kebab mince mixture (as per kebab rolls recipe)
  • sliced bread cut into two
  • 2 beaten eggs
  • oil for shallow frying

Instructions

Add the egg to mince mixture and mix well.

Coat only one side of bread generously with mince (use a knife) and places mince side up in a plate until all of the mince is used up.

Heat oil to medium in a non-stick pan.

Dip coated slice into the beaten egg, place carefully into the heated oil, plain side first, fry until golden brown, turn over and fry other side until golden brown.

Remove into serving plate garnish with tomatoes and lettuce (optional).

Serve with avocado chutney and carrot pickle.
