Semolina/Sooji Halwa

(Semolina and flour dessert)

Like so many dishes, there are many recipes for sooji halwa.  This one is our family favourite and always turns out right.  Sooji halwa is usually made for large gatherings like festivals and religious functions as it is easy to serve and can also be bagged up for distribution.

A lovely warming dessert best served piping hot!

Ingredients

  • 8oz butter
  • 1 cup semolina
  • ½ cup plain flour/gram flour
  • half tsp ground cardamoms
  • 1 cup sugar
  • 2 cups water
  • 1½ cups milk

Method

  1. Melt the butter in a pan, add semolina and plain flour, keep on a very low heat and keep stirring every 5mins until it gives off a roasting aroma and turns medium brown in colour, should be ready in 40 – 45 mins. Switch off.
  2. Add the water into a separate pan, add cardamom and sugar mix well, bring to the boil and switch off.
  3. Add the milk and stir once, do not return to the heat.
  4. Add the liquid and sugar mixture to the roasted semolina, mix well until no lumps remain and switch on to a medium heat.
  5. Keep stirring every few minutes until the butter separates (bhun) and remove into a serving dish.
