Avocado chutney

This is an excellent accompaniment for crisps and tacos but also goes well with Chicken Cornflakes and Lamb chops with tomato puree.

Ingredients

  • 4 ripe avocados
  • 2 tbs fresh lime juice
  • 1 crushed green chillie or a touch of red chillie powder
  • 1 tbs freshly chopped green coriander
  • 1oz finely chopped onion

Instructions

Cut the avocados in half, gently remove the stone (and discard), peel and place in a blender.

Add the lime juice, chillie, coriander and onion.

Blend until all of the ingredients are well mixed.

Cover with cling film and keep in the refrigerator for 30 mins.

If a blender is not handy, finely chop all ingredients and mash with a fork.
