Pilao with Whole chicken

We have a feast every Ramadan at my friend’s house, this year she made this lovely whole chicken pilao and when the dish arrived at the table, it made quite an impression and the concept to slice the chicken and serve yourself with the rice was very popular!

Ingredients

  • 1 whole chicken (approx 2.5lb)
  • 1tbs ginger
  • 1tbs garlic
  • 1 tbs salt
  • 1 tbs ground black pepper
  • 1 tsp red chillie powder
  • 1 tbs whole cumin
  • 1 tbs freshly crushed dry coriander (optional)
  • 2 tbs vinegar

Method

  1. Apply all ingredients to the chicken and marinate in the refrigerator for 4 hours.
  2. Switch on the oven to a medium heat and bake the chicken tightly covered for 1 hour or until juices run clear, save juices. Keep chicken covered in the oven.
  3. follow recipe for Pilao Rice and Cook 2 mugs, adding 1lb potatoes (optional) cut into 3in cubes when you add the the water/stock with the drained rice.
  4.  Use a fish slice to gently turn out the rice onto a large serving platter, remove whole roasted chicken from the oven and place on top of the rice. Sprinkle fresh coriander and garam masala and serve with plain full fat yoghurt.
