Pilli Pilli means chillies in Kiswahili! in other parts of the World this dish is called Piri Piri chicken! This recipe is a mixture of two recipes, one from my dear friend in Nakuru and the other from my male cousin in Nairobi!
Ingredients
Stage 1
- 2lb chicken pieces with bones
- 2 tsp salt
- 2 tsp black pepper
- 2 tbs plain flour plus 2 tbs cornflour (optional)
- Oil for frying (optional)
Stage 2
- 3 tbs butter (or margarine or Olive oil)
- 1 tsp salt
- 1 tsp red chillie powder
- 1 tsp crushed garlic
- 2 tbs paprika
- 2 tbs tomato puree
- 3 tbs freshly squeezed lemon juice
Method
Stage 1
- Wash and drain chicken pieces, apply salt and pepper and keep in refrigerator for 4 hours or overnight.
- Sprinkle with mixture of plain flour and cornflour and deep fry until crisp.
- For healthy option – Place chicken pieces in a saucepan and cook on medium heat until chicken is fully cooked.
Stage 2
- Melt the butter over low heat in a frying pan, add all other ingredients, increase heat until mixture is bubbling and switch off.
- To serve, place a layer of crisp lettuce leaves on a large serving platter, place hot fried or steamed chicken on top of the lettuce, pour pilli pillii (piri piri) sauce over the chicken and serve with salted fries (chips).
