Pilli Pilli (Piri Piri) Chicken

Pilli Pilli means chillies in Kiswahili! in other parts of the World this dish is called Piri Piri chicken! This recipe is a mixture of two recipes, one from my dear friend in Nakuru and the other from my male cousin in Nairobi!

Ingredients

Stage 1

  • 2lb chicken pieces with bones
  • 2 tsp salt
  • 2 tsp black pepper
  • 2 tbs plain flour plus 2 tbs cornflour (optional)
  • Oil for frying (optional)

Stage 2

  • 3 tbs butter (or margarine or Olive oil)
  • 1 tsp salt
  • 1 tsp red chillie powder
  • 1 tsp crushed garlic
  • 2 tbs paprika
  • 2 tbs tomato puree
  • 3 tbs freshly squeezed lemon juice

Method

Stage 1

  1. Wash and drain chicken pieces, apply salt and pepper and keep in refrigerator for 4 hours or overnight.
  2. Sprinkle with mixture of plain flour and cornflour and deep fry until crisp.
  3. For healthy option – Place chicken pieces in a saucepan and cook on medium heat until chicken is fully cooked.

Stage 2

  1. Melt the butter over low heat in a frying pan, add all other ingredients, increase heat until mixture is bubbling and switch off.
  2. To serve, place a layer of crisp lettuce leaves on a large serving platter, place hot fried or steamed chicken on top of the lettuce, pour pilli pillii (piri piri) sauce over the chicken and serve with salted fries (chips).
