Tabouleh

This is a very healthy refreshing Middle Eastern salad which I had at a restaurant in Edgware road, London and thereafter learnt the recipe by trial and error.
This salad goes very well with bbq dishes and with burgers.

Ingredients

  • 1 bunch parsley
  • 8 oz spring onions
  • 1 cup fresh mint leaves
  • 8 oz fresh tomatoes
  • 1 cup dry couscous (cooked as per instructions on pack)
  • 4 tbs freshly sliced coriander (optional)
  • for dressing
  • 2 tbs lime juice
  • Salt to taste
  • 2 tbs olive oil
  • half tsp crushed black pepper

Instructions

Finely slice parsley as thinly as possible, wash in plenty of cold water and drain in a colander. Transfer into a salad bowl.

Thinly slice the spring onions, fresh mint leaves and dice the tomatoes into tiny pieces, add to parsley.

Mix the ingredients for the dressing in a separate bowl, add to the salad bowl, mix well with a wooden spoon, refrigerate for 3 hours.
