This is a very healthy refreshing Middle Eastern salad which I had at a restaurant in Edgware road, London and thereafter learnt the recipe by trial and error.
This salad goes very well with bbq dishes and with burgers.
Ingredients
- 1 bunch parsley
- 8 oz spring onions
- 1 cup fresh mint leaves
- 8 oz fresh tomatoes
- 1 cup dry couscous (cooked as per instructions on pack)
- 4 tbs freshly sliced coriander (optional)
- for dressing
- 2 tbs lime juice
- Salt to taste
- 2 tbs olive oil
- half tsp crushed black pepper
Method
- Finely slice parsley as thinly as possible, wash in plenty of cold water and drain in a colander. Transfer into a salad bowl.
- Thinly slice the spring onions, fresh mint leaves and dice the tomatoes into tiny pieces, add to parsley.
- Mix the ingredients for the dressing in a separate bowl, add to the salad bowl, mix well with a wooden spoon, refrigerate for 3 hours.
