Mexican Bread

I learnt this from my mum in California, its easy and lovely as a starter or tea party snack.

Ingredients

  • 2 cups Self Raising flour
  • 3/4 cup oil
  • 3 eggs
  • 1 cup chopped green peppers
  • 2 tbs finely chopped onion
  • 1 tbs crushed green chillies or 1 tbs chillie flakes
  • 1½ cups plain low fat yoghurt
  • 6 tbs fresh sliced green coriander
  • 1 tbs whole cumin
  • 2 tsps fresh crushed garlic
  • 2 tsps salt
  • Cupful grated cheddar cheese (optional)
  • Heat oven to medium heat.

Method

  1. Add all ingredients into a bowl and mix well with a spoon.
  2. Place mixture into a non-greased 10in baking tray, top with grated cheddar cheese (optional)  and bake on until brown and cooked through (approx 30mins – 45mins).  Whole Mexican
  3. Cool and cut into squares.

Can be served with a chutney of your choice.
