I learnt this from my mum in California, its easy and lovely as a starter or tea party snack.
Ingredients
- 2 cups Self Raising flour
- 3/4 cup oil
- 3 eggs
- 1 cup chopped green peppers
- 2 tbs finely chopped onion
- 1 tbs crushed green chillies or 1 tbs chillie flakes
- 1½ cups plain low fat yoghurt
- 6 tbs fresh sliced green coriander
- 1 tbs whole cumin
- 2 tsps fresh crushed garlic
- 2 tsps salt
- Cupful grated cheddar cheese (optional)
- Heat oven to medium heat.
Method
- Add all ingredients into a bowl and mix well with a spoon.
- Place mixture into a non-greased 10in baking tray, top with grated cheddar cheese (optional) and bake on until brown and cooked through (approx 30mins – 45mins).
- Cool and cut into squares.
Can be served with a chutney of your choice.
