Umm! these are smokey bbq wings taught to me by my youngest sister-in-law, who loves making unusual dishes and is a master at them!
Ingredients – stage 1
- 2lb chicken wings (with our without skin)
- 2 tsp salt
- 2 tsp crushed black pepper
- 4 tbs vinegar (any)
Ingredients – stage 2
- 2 tbs olive oil
- 2oz finely chopped onion
- 1 cup bbq sauce (any)
- 1 cup ketchup (any)
- 4 tbs good quality chillie sauce e.g sambel olek, Encona etc (adjust to personal taste, omit for mild)
- 1 tbs lime/lemon juice
- 2 tbs clear honey
Method – stage 1
- Wash and drain the wings in a collander.
- Apply salt, pepper and vinegar to the wings and marinate for 2 hrs or more.
- Place in a pre-heated oven on medium for approx 30 mins or until almost cooked.
- Or cook in a covered pan on medium heat until cooked through.
- Discard the liquid and remove wings into a bowl and keep to one side.
Method – stage 2
- Heat a pan, add the oil and the onions, cook until onions turn soft (not brown).
- Add the bbq sauce, ketchup and chillie sauce.
- Let boil and bubble on low heat until nicely thickened.
- Add honey and citric juice, mix in and switch off heat.
- Switch on grill on full and heat up for 5 mins.
- Pour hot sauce mixture onto the pre-cooked wings from Stage 1.
- Toss and mix well, place on grill tray and place under the hot grill until wings are brown on one side.
- Turn carefully with tongs and brown on the other side.
- Serve piping hot on a sizzler, or on a large flat plate WITHOUT any accompaniments to enjoy the full flavour.
