Fish Kebabs

This is a simple recipe, perfect as a starter, ideal for picnics and excellent as a sandwich filling. It was passed on to me by a Khoji friend from Tanzania.

Ingredients

  • oil for deep frying
  • 10ozs tinned tuna in brine or water
  • 4 oz boiled and mashed potatoes
  • 1 egg
  • 2 tbs freshly chopped green coriander
  • 2 crushed green chillies (skip for mild)
  • 2 oz crushed onion

Instructions

Heat oil to a medium heat in a wok or deep frying pan.

Place all other ingredients in a large deep bowl; mix well.

Make into 2 inch round, oval or flat burger shapes and deep fry until golden brown.

Serve cold or warm with any salad and yoghurt chutney.
