This is a simple recipe, perfect as a starter, ideal for picnics and excellent as a sandwich filling. It was passed on to me by a Khoji friend from Tanzania.
Ingredients
- oil for deep frying
- 10ozs tinned tuna in brine or water
- 4 oz boiled and mashed potatoes
- 1 egg
- 2 tbs freshly chopped green coriander
- 2 crushed green chillies (skip for mild)
- 2 oz crushed onion
Method
- Heat oil to a medium heat in a wok or deep frying pan.
- Place all other ingredients in a large deep bowl; mix well.
- Make into 2 inch round, oval or flat burger shapes and deep fry until golden brown.
- Serve cold or warm with any salad and yoghurt chutney.
