Semolina Halwa

(Semolina and flour dessert)

This is mostly made for larger gatherings in the Winter months and also as a give away dessert at religious gatherings.

A lovely warming dessert best served piping hot!

Ingredients

  • 8oz butter
  • 1 cup semolina
  • ½ cup plain flour
  • half tsp ground cardamoms
  • 1¼ cup sugar
  • 2 cups water
  • 1½ cups milk

Instructions

Melt the butter in a pan, add semolina and plain flour, keep on a very low heat and keep stirring every 5mins until it gives off a roasting aroma and turns medium brown in colour. Switch off.

.Add the water into a separate pan, add cardamom and sugar mix well, bring to the boil and switch off.

Add the milk and stir once, do not return to the heat.

Add the liquid and sugar mixture to the roasted semolina, mix well until no lumps remain and switch on to a medium heat.

Keep stirring every few minutes until the butter separates (bhun) and remove into a serving dish.
