Plated Blackberry Trifle

I watched a television show in the UK where Nigella Lawson made this very simple dessert.  My niece made this under my guidance during my trip to USA and I had it posted onto my sabihaskitchen facebook page, following the clamouring for the recipe, here goes.

Ingredients

  • 1lb loaf loaf madeira/lemon cake
  • 1 orange
  • 2 tbs orange marmalade
  • 1 tsp lime/lemon juice
  • juice of one fresh orange
  • 10oz whipping or double cream
  • 2 cups blackberries/blueberries/strawberries
  • or mangoes if in season

Method

  1. Cut the cake into slices and arrange them on a plate or a cake stand.
  2. Zest the orange or clementines into a bowl and keep refrigerated. (can be omitted if you are not too keen on zest/rind)
  3. Place the marmalade in an empty jar, add the orange juice and lemon juice, close the jar and shake well to mix.
  4. Drizzle the marmalade mixture over the cake slices, keep soaked for 10 mins.
  5. Whip the cream in a bowl until thick but soft, spoon over the top of the saturated cake.
  6. Arrange the blackberries/blueberries/strawberries over the whipped cream, and scatter with the reserved zest.
  7. TO VARY:
  8. When fresh mangoes are in season, soak the cake with mango/lime juice, then use slices of mango to cover the cake, scatter blue berries for contrast just before serving.Plated blackberry trifle
