Fresh mint Paneer (Hyderabadi)

I came across this recipe from cookingshooking on my Facebook feed, I made it yesterday and it was soooo popular, it motivated me to write it onto my website immediately. A simple and tasty starter.

Ingredients

  • 2 tbs oil
  • 2 tsp finely sliced garlic
  • 3 slit green chillies
  • 1 capsicum/bell pepper
  • 1 small onion
  • 1 cupful coarsely chopped fresh mint leaves
  • 3 tbs finely sliced fresh coriander
  • 8 oz (225g) paneer
  • 1 tsp salt (or to taste)
  • ¼ tsp turmeric
  • ½ tsp red chillie flakes
  • 2 tbs lime/lemon juice

Method

  1. Cut the capsicum and the paneer into small diagonal pieces and cut the onions into chunks.
  2. Put the oil into a heated wok, add the garlic and chillies, stir-fry for 1-2 mins, then add the sliced capsicum, stir-fry for another minute and add the onions, stir together for a further 2 mins.
  3. Add the mint leaves and half the coriander, fry together until mint is slightly wilted, add the paneer and toss the contents by moving the wok around. Add the spices and stir-fry for 2-3 minutes, do this gently taking care not to break the paneer.
  4. Finally add the remaining fresh coriander, the lemon juice and serve on a platter whilst still hot.
