I just love Thai food, it’s my all time favourite cuisine! And I enjoy recreating restaurant dishes in my own kitchen, but nobody can match the level and authenticity of Thai dishes made by my bhabhi in the USA. So guys here are her very own recipes, she can make a Thai meal for 20 without even being phased a little bit! First off – family favourite Pad kee mao.
Sauce
Ingredients
- In a jar add –
- 1 tsp crushed ginger
- 2 tsp tbsp crushed garlic
- 1 tbsp brown sugar
- 1 tbsp fish sauce
- 2 tbs sweet soy sauce
- 2 tbs mushroom oyster sauce
- 2 tbsp sriracha or other chillie sauce
- Cover the jar with a lid and mix well, set aside
Key ingredients
- 250 g boneless chicken cut into small piece
- 125 g small onion sliced
- 2 fresh or bottled jalapeƱos sliced
- 200 g tomatoes cut into big chunks
- 2 eggs
- 2 cups of packed thai basil (or any basil if not available)
- 200 g thick Thai rice noodles or fresh rice noodles
Method
- If using dry noodles follow instructions on the packet and have them ready. The ones I use need soaking for 10 mins in boiling water, then in cold water for 5 mins, I drain them just before adding them to the or they get stuck together.
- If using fresh rice noodles sheets, separate and break into smaller pieces.
- Mix all the ingredients for the sauce and keep aside ready for use later.
- Add 2 tbs oil into a wok, add the chicken, salt and pepper and stir fry for 2 mins and remove into a large bowl.
- Add 2 tbs oil into the same wok, add the eggs, salt and pepper mix well, cook and add to the same bowl as the chicken.
- Stir fry the onions and jalapenos for 1 min and drop onto the egg and chicken mixture.
- Heat the wok on high until smoky, add a little oil and add the noodles. Stir gently once or twice until heated through and begin to soften and change color.
- Now add the chicken, veggies, tomatoes and half the basil leaves. Stir gently together taking care not to break the noodles.
- Finally add the sauce and shake the pan and stir once or twice very gently until noodles are coated.
- Do a taste test, add sugar, fish sauce or more chillies to your taste.
- Sprinkle with remaining basil leaves and serve.
- Tip – if you prefer to have more veggies, stir-fry one red pepper and some fresh green beans with the onions!
