Those that are familiar with Thai cuisine, will know this as a healthy sharp tasting starter, its quite simple to make as with most Thai food made in sabihaskitchen, it is made with readily available pastes, just make sure to buy a Thai brand and not a clone!
Ingredients
- 2 tbs oil
- 1 tsp ground ginger
- 1 tsp ground garlic
- 1 chicken stock cube (optional)
- 500 g chicken/lamb/beef mince
- Thai Laab packet mix
- 2 tbs lime juice
- 1 tbs fish sauce
- 1 tsp chillie flakes
- 1 cup sliced Thai or other basil
- 1 cup sliced fresh coriander
- 1 cup sliced fresh mint
- 1 red onion sliced
- Or half bunch of spring onions sliced lengthwise
- 200 g of cucumber finely sliced
- Iceberg or other ‘crisp’ lettuce
Method
- Add the oil to a pan, add the ginger and garlic, cook for 2 mins.
- Add the mince and chicken stock cube. Cook on medium heat, stirring from time to time until mince is cooked and all the water has dried up.
- Sprinkle the contents of the packet mix onto the mince, stir in and set aside.
- Wash and separate leaves of lettuce.
- Mix in the cut greens with the mince, stir and taste, add more chillies, lime or sugar to taste.
- Place the lettuce leaves on a platter, spoon some of the mince onto each leaf, add the onions and cucumber and serve with a sweet chillie sauce for dipping Or
- Break up the lettuce leaves and place on a serving platter, sprinkle a generous portion of the the mince mixture, onions, cucumber onto the leaves and serve with a sweet chillie sauce for dipping.
