Seems to be trending over Tik Tok and Insta at this time, so here goes our ‘doctored’ family version. Most recipes add cheese and some prefer to add fresh spinach, feel free to add or not as you please
Ingredients
- 500g thinly sliced chicken breast/thigh
- 1 tsp oregano
- 1/2 tsp salt
- 1/2 tsp powdered garlic
- 1 tbs butter, 1 tbs oil
Sauce
- 2 tbs butter
- 1 tbs red pesto
- 1 teaspoon crushed garlic
- 1/2 tsp paprika
- 250 ml single cream
- lemon juice to taste
Method
- Place the chicken in a single layer on a dish. Sprinkle oregano, salt and powdered garlic to the chicken. Mix and keep aside for 30 mins.
- Heat a frying pan or griddle, add butter and oil, place chicken pieces singly onto the griddle, cook for 3 mins each side or until chicken is cooked through.
- Keep aside.
Sauce
- Melt the butter in a frying pan.
- Add the red pesto and the crushed garlic mix well, cook together for 1-2 mins
- Lay the pre-cooked chicken gently into the mix, cook together for 2 mins, carefully turning the chicken. Switch off heat.
- Just before serving, pour the cream onto the chicken, switch on to a very low heat, do not bring to a boil. Squeeze fresh lemon juice and switch off.
- Best served with mashed potatoes, garlic bread and vegetables of choice, but can serve with noodles if preferred.
